Χρησιμοποιείται στο μούστο και στα κρασιά, αναπτύσσει αντιοξειδωτική και αντισηπτική δράση, επίσης διευκολύνει τη διαλυτότητα των ευεργετικών ουσιών.
ΔΟΣΕΙΣ: 10-30 gr/ 100kg στο μούστο, ανάλογα με την υγιεινή κατάσταση των σταφυλιών. 2-5 gr/100kg στο κρασί, στη διύλιση, μετάγγιση ή μετά το φιλτράρισμα. 10-15 gr/100L για τη συντήρηση των φιλτραρισμένων κρασιών. 1 gr Metabisolfito ποτασίου αναπτύσσει περίπου 0,5 gr SO2.
Το metabisulfite προστίθεται:
- Αμέσως μετά το πάτημα των σταφυλιών
- Αμέσως μετά την λήξη της αλκοολικής ζύμωση
- Κατά την συντήρηση του οίνου
